der rheinlander cheese fondue

For my 10th birthday my parents took me on a three hour drive to Der Rheinlander restaurant, in Portland, OR, for my birthday. Very big hit. Starting with this WONDERFUL cheese fondue served with chunks of wonderful dark rye bread. Der Rheinlander used to give away this recipe although its a little more difficult to find these days. If you are in the Portland, OR area you may be able to find this fondue jarred in some grocery stores.

2 to 8 depending on whether its me and my sister.
Ingredients
- 5 cups processed swiss american cheese
- 2 cups water
- 1 cup sauterne (chablis) wine
- 1 tablespoon butter
- 1/4 teaspoon msg (accent brand)
- 1 dash white pepper
- 1 dash nutmeg
- 1/2 - loaf rye bread
- 1/2 - loaf french bread
How To Make der rheinlander cheese fondue

Step 1Grate or chop cheese.

Step 2Bring water, wine, butter and seasoning to a boil. Then add cheese and set into double boiler.

Step 3Stir thoroughly with wooden spoon until cheese melts into a smooth heavy sauce.

Step 4If fondue seems too thick, add more wine. If too thin, add more cheese.

Step 5Dice bread into 2-inch squares and brown lightly in oven.

Step 6Keep fondue warm while serving, else a skin will form on the top.
