Ingredients
- 5 pounds deer
- 5 pounds beef
- 5 pounds pork belly
- 3 teaspoons pink curing salt
- 6 tablespoons paprika, sweet mild
- 1 1/2 teaspoons coarse ground black pepper
- 1 1/2 teaspoons white pepper
- 1 1/2 teaspoons garlic
- 1 1/2 teaspoons dried celery flakes
- 7 tablespoons salt
- 2 tablespoons sugar
- 1 1/2 tablespoons mace
- 3 cups water
- 3 1/2 ounces powdered milk
- OPTIONAL FOR JALAPENO CHEESE STICKS
- 3 pounds tempered cheese
- 6 - jalapenos, fresh chopped
- 2 tablespoons dried jalappenos
- MIX ALL AFTER MEAT IS MIXED
How To Make deer summer sausage

Step 1grind meat keeping as cold as possible without freezing solid put grinder parts in freezer to keep cold

Step 2mix spices add water mix well . mix thru the meat well till pastey

Step 3add jalapenos & Cheese fold

Step 4stuff in 17mm casings Or Casing of choice after leaving in freezer for 1hr

Step 5refrigerate for 24 hrs

Step 6smoke until 160 degrees internal temp.

Step 7refrigerate 24 hrs or dry till cool
