This is a sausage my kids and family make they Love the spicy flavor of meat sticks!

Ingredients

  • 5 pounds deer
  • 5 pounds beef
  • 5 pounds pork belly
  • 3 teaspoons pink curing salt
  • 6 tablespoons paprika, sweet mild
  • 1 1/2 teaspoons coarse ground black pepper
  • 1 1/2 teaspoons white pepper
  • 1 1/2 teaspoons garlic
  • 1 1/2 teaspoons dried celery flakes
  • 7 tablespoons salt
  • 2 tablespoons sugar
  • 1 1/2 tablespoons mace
  • 3 cups water
  • 3 1/2 ounces powdered milk
  • OPTIONAL FOR JALAPENO CHEESE STICKS
  • 3 pounds tempered cheese
  • 6 - jalapenos, fresh chopped
  • 2 tablespoons dried jalappenos
  • MIX ALL AFTER MEAT IS MIXED

How To Make deer summer sausage

  • Step 1
    grind meat keeping as cold as possible without freezing solid put grinder parts in freezer to keep cold
  • Step 2
    mix spices add water mix well . mix thru the meat well till pastey
  • Step 3
    add jalapenos & Cheese fold
  • Step 4
    stuff in 17mm casings Or Casing of choice after leaving in freezer for 1hr
  • Step 5
    refrigerate for 24 hrs
  • Step 6
    smoke until 160 degrees internal temp.
  • Step 7
    refrigerate 24 hrs or dry till cool
