This really isn't even a recipe. Its just something quick I made on my way out the door for a book club meeting one night. I had found something like it on the web somewhere, maybe here? Its great as an appetizer,a meeting, a pot luck, a tea party or any time!

·pitted dates, any amount you want

·cream cheese or mascarpone cheese

·raw almonds, skinned or not
How to Make Cheese Stuffed Dates
- Cut each of the dates in half. If they are not pitted, now is the time to pit them. They look like little Lego sized canoes. Line them up on a plate.
- Take your cheese of choice and put it into a bag, like a sandwich bag. Spoon the messy stuff in and cut off a little snippet of the corner of the bag. Squeeze the cheese into each of the little hollow dates. Tip each one with an almond. I learned an easy way to skin them, and had skinned a bunch earlier, but darned if I could find them when I needed them. So the ones in this picture are regular raw almonds.
- To skin (blanch) almonds: Bring a pot of water to boil. Add some almonds and boil them for about 1 minute.
Drain them and put in cold water for about 30 seconds. Drain again and put on a towel or paper towel. Cover with a towel and rub vigorously. The skins just come right off! It just makes a prettier presentation sometimes to have 'blanched' almonds.
