Had some time on my hands, looked into the pantry to see what I had… came up with these. All I can say is: DAMN!!! These are crazy easy to put together, and can be customized to your particular tastes. Hint: Since you're not using a lot of sauce, choose something with some kick in it. So, you ready… Let’s get into the kitchen.

Ingredients

PLAN/PURCHASE
1 medium tortillas, i prefer the flour variety, cut into 4-inch rounds
1 tablespoon pizza sauce, choose your favorite
1/2 tablespoon parmesan cheese, grated
1 tablespoon mozzarella cheese, i prefer buffalo, shredded
- olive oil, extra virgin for brushing
OPTIONAL INGREDIENTS
- italian sausage
- pepperoni
- ham
- beef
- whatever

How To Make awesome mini pizza bites

Step 1

PREP/PURCHASE

Step 2

Gather and prep all your ingredients.
Step 3

Chef’s Note: You will need a standard-size muffin tin, with openings of about 3 inches, and six muffins to the tin.
Step 4

Place a rack in the middle position, and preheat the oven to 400f (205c).
Step 5

Brush both sides of the tortilla with olive oil.
Step 6

Push into the muffin tin, and add the pizza sauce, and spread over the bottom and sides of the tortilla.
Step 7

Add your toppings… have fun and be generous.
Step 8

Top with the cheese (Parmesan first, then mozzarella).
Step 9

Chef’s Note: Repeat for any additional mini pizza bites.
Step 10

Place into the preheated oven, and bake for 12-14 minutes.

Chef’s Tip: The cheese should be bubbling and beginning to brown.

Place on a serving platter, and stand back. Enjoy.
