I've never made this before, so for you more advanced salsa makers this may seem rather simple. But for a first attempt with no real recipe to follow, I think I did AWESOME! :)

Ingredients

  • 1 - mango, ripe, diced 1/2" or less
  • 1/3 small red onion, diced
  • 1/4 - red, yellow, orange or green bell pepper, diced
  • 1/2 medium jalapeno pepper, finely diced
  • 1 - handful cilantro leaves, coarsely chopped
  • 1 small can of corn kernals, drained
  • 2 - limes, juiced
  • - salt & pepper to taste

How To Make mango salsa

  • Step 1
    Toss all ingredients to combine and chill for at least an hour -- if you can wait that long!
  • Step 2
    Alternate or additional items you can add would be black beans (drained and rinsed), serrano chili peppers (if you like more heat).
  • Step 3
    Makes about 2 cups. Serve with your favorite tortilla chip.
  • Step 4
    Note to self...I bet this would be good mixed with Quinoa, Cous-Cous or rice for a refreshing summer salad!
