cucumbers and onions

Recipe by

Even though it requires sitting overnight, this recipe is so easy to make. My mother made this all the time when I was growing up--it was one of her favorites and also my sister's. One caution: this salad should be very creamy, so you may need to adjust the dressing ingredients accordingly. Recipe & photo:

  • 3
Slice the onions thin and mix gently with the cucumber slices.

In a small bowl, beat together the mayonnaise or salad dressing, sugar and vinegar until creamy.
