Even though it requires sitting overnight, this recipe is so easy to make. My mother made this all the time when I was growing up--it was one of her favorites and also my sister's. One caution: this salad should be very creamy, so you may need to adjust the dressing ingredients accordingly.

Ingredients

2 medium
cucumbers
2 medium
onions
salt
2 to 3 Tbsp
mayonnaise or salad dressing
1 Tbsp
sugar
1 Tbsp
vinegar

How to Make CUCUMBERS AND ONIONS

Step-by-Step

  • 1Peel the cucumbers and slice thin. Layer in a shallow dish, sprinkling each layer with salt. Let stand overnight.
  • 2In the morning, drain the cucumbers and rinse; let dry on paper towels.
  • 3Slice the onions thin and mix gently with the cucumber slices.
  • 4In a small bowl, beat together the mayonnaise or salad dressing, sugar and vinegar until creamy.
  • 5Stir into the mixed cucumbers and onions.
  • 6This dish should be creamy, so the dressing may have to be doubled if not creamy enough.
  • 7Serve on a bed of lettuce with tomato slices on the side, if desired.
