Even though it requires sitting overnight, this recipe is so easy to make. My mother made this all the time when I was growing up--it was one of her favorites and also my sister's. Ingredients
- 2 medium cucumbers
- 2 medium onions
- - salt
- 2 to 3 tablespoons mayonnaise or salad dressing
- 1 tablespoon sugar
- 1 tablespoon vinegar
How To Make cucumbers and onions

Step 1Peel the cucumbers and slice thin. Layer in a shallow dish, sprinkling each layer with salt. Let stand overnight.

Step 2In the morning, drain the cucumbers and rinse; let dry on paper towels.

Step 3Slice the onions thin and mix gently with the cucumber slices.

Step 4In a small bowl, beat together the mayonnaise or salad dressing, sugar and vinegar until creamy.

Step 5Stir into the mixed cucumbers and onions.

Step 6This dish should be creamy, so the dressing may have to be doubled if not creamy enough.

Step 7Serve on a bed of lettuce with tomato slices on the side, if desired.
