Ingredients

  • 1 large cucumber
  • 4 - garlic cloves
  • 3/4 cup pine nuts
  • 1/2 teaspoon salt
  • - pepper to taste
  • 1 2/3 cups yogurt, plain
  • 1/2 cup cold water
  • 2 teaspoons lemon juice
  • 1/2 cup pine nuts
  • 1 teaspoon olive oil
  • - dill, fresh

How To Make cucumber and yogurt soup with pine nuts

  • Step 1
    Peel the cucumber, dice the flesh into small bite size pieces, set aside.
  • Step 2
    Crush the garlic,3/4 cuo pine nuts, salt and pepper thoroughly using a mortar and pestle. Transfer the mixture into a large bowl and beat in the yogurt and diced cucumber. Add the water along with the lemon juice to taste.
  • Step 3
    To serve, pour soup into bowls for soup serving, scatter over a few pine nuts, drizzle with olive oil, and garnish with fresh dill.
