- 3/4 cup pine nuts
- 1/2 teaspoon salt

- 1/2 cup cold water
- 2 teaspoons lemon juice
- 1/2 cup pine nuts
- 1 teaspoon olive oil
- - dill, fresh
How To Make cucumber and yogurt soup with pine nuts

Step 1Peel the cucumber, dice the flesh into small bite size pieces, set aside.

Step 2Crush the garlic,3/4 cuo pine nuts, salt and pepper thoroughly using a mortar and pestle. Transfer the mixture into a large bowl and beat in the yogurt and diced cucumber. Add the water along with the lemon juice to taste.

Step 3To serve, pour soup into bowls for soup serving, scatter over a few pine nuts, drizzle with olive oil, and garnish with fresh dill.
