southwest turkey quesadillas

I thawed out some of the leftover turkey from Thanksgiving one day and was wondering what to do with it. We get tired of the traditional leftover dinners. Looking at what I had in the pantry and came up with this. Everyone loved it. Great way to use up that left over Thanksgiving turkey.

Ingredients

  • MIX IN A BOWL
  • 1 can refried beans
  • 1 cup salsa
  • 1/2 cup sweet onion finley chopped
  • 3 cloves garlic finley minced
  • 1/2 cup chicken broth
  • 1 teaspoon cumin
  • 1 1/8 teaspoons chili powder
  • 1 tablespoon jalapeño peppers finley chopped
  • MIX IN A BOWL
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili pepper
  • dash salt and pepper
  • YOU NEED
  • 4 large 4 flour tortillas (large burrito size)
  • 1 package (8 ounces) shredded mexican blend cheese
  • - salsa and sour cream

How To Make southwest turkey quesadillas

  • Step 1
    Heat griddle or skillet to 375°F. Preheat oven 400°F.
  • Step 2
    Lightly spray olive oil on 1 side of each tortilla. Oil side down, brown about 2 minutes, flip and spread ¼ of the bean salsa mix on half. Sprinkle ¼ seasoned turkey and ¼ of the cheese. Fold over and carefully flip, cook until cheese is melted and tortillas are crisp, about 2 to 3 minutes per side.
  • Step 3
    Place in preheated oven on baking sheet to keep worm while making remaining quesadillas.
  • Step 4
    Cut each quesadilla into wedges. Serve with salsa and sour cream.
