how to: measure cold coconut oil (or shortening)

Coconut oil is hard, when its just cooler than room temperature, and its not even a little soft like shortening, its really hard! It melts at your touch but still its hard to get to measure it. Melting it is one way, but if your using in place of cold butter in baking- that's a wasted step and a pain :) Here's a better idea as taught to me in 7th grade Home-Ec, this applies to shortening, tub margarine, anything that is a greasy and waxy solid. Hope this is helpful to you!

    2 cup plastic or glass measure (or bigger)
  • 1 c
    cold water
  • quality organic coconut oil
  • or shortening, tub margarine, etc.

    fine mesh strainer, optional

How To Make how to: measure cold coconut oil (or shortening)

    Start with the measuring cup, I have a 2 cup Glass (Pyrex) measuring cup. Fill it to the one cup line with cold water.

    Using a spoon, gradually add a spoonful at a time, or chucks, of the oil to the water until the water line reaches the desired amount. (ie: if you need 2/3 cup of coconut oil, add it to 1 cup of water- when the water level reaches 1 and 2/3 cups you are done!) Be sure to gently push the coconut oil down into the cup so that all the pieces stick together, and to the bottom of the cup so that it all stays below the water level to get the most accurate measure. If its sticking up above the water, its not included in the measurement.

    Dump out the water. I usually just dump it into my hand over the sink if its a small amount, if the coconut oil is in lots of little pieces and your afraid of losing some just pour it through a fine mesh strainer.
