Blue Ribbon Recipe
Oh what a good combination - lime juice, cumin, and cilantro are so good together. This salad would be wonderful on a hot summer day or, in our opinion, any day! A great recipe if you're hosting a girls lunch or looking for a light dinner.

Ingredients

1/2 lbcooked, peeled shrimp cut into bite size chunks

1/2 lbimitation crab meat chopped into bite size chunks (you can use fresh if you wanna go to the trouble, but not canned)

2 Tbspchopped fresh cilantro

2 Tbspchopped fresh Italian parsley

2 Tbspfresh lime juice

1 tspcumin
-
1/2 tspground or super finely chopped lime peel

3fresh avocados
-
·extra lime juice to squeeze onto avocados

3 Tbspmayonaise
How to Make Cilantro Lime Seafood Salad (In An Avocado Boat)
- Stir mayo, juices, peel and all spices together in a bowl to mix well.
- Add crab and shrimp and stir till well coated.
- Cut avocados in half, remove pit, run a spoon around the peel to make it easier to eat, sprinkle well with lime juice, salt and pepper (I also LOVE the GREEN Tabasco sauce for this step but it is optional).
- Load avocados with the salad mixture and enjoy!
These are SOOOOOOO easy and taste GREAT!
