Ingredients

BROWN RICE
-
2-3 cbrown rice, cooked

2shallots, chopped
-
1 ccarrots, grated

1/2 cgolden raisins
-
1/2 cred bell pepper, chopped

1/2 cwalnuts, chopped
-
1/4 cchampagne-mustard vinaigrette (recipe below)
-
CHAMPAGNE-MUSTARD VINAIGRETTE
-
1/4 cchampagne vinegar
-
1 tspsugar
-
1 Tbspshallot, chopped
-
2 tspdijon mustard
-
1/2 colive oil
-
dash(es)salt and pepper
How to Make Brown Rice Medley
- Brown rice - I recommend cooking good brown rice, which takes about 45 minutes. The flavor is much better than the minute brown rice. Another tip for more flavor is to cook the rice in half vegetable broth, half water.
Mix all ingredients together in a bowl. - Prepare vinaigrette by whisking all ingredients together until well blended.
- Drizzle dressing over rice, tossing gently to coat, until you achieve your desired saturation.
Serve!
