It may be a little healthier than most lasagnas, but it is so yummy, that you won't even notice. Serve w/ a garlic bread and a simple salad.

Ingredients For healthy alfredo chicken lasagna

  • 1 box
    whole wheat or whole grain lasagna noodles
  • 5 c
    cooked, chopped chicken
  • 2
    chopped plum tomatoes
  • 1/2 c
    red onion, chopped
  • 2 tsp
    minced garlic
  • 2 c
    reduecd-fat, shredded italian-style cheese
  • 1
    10 oz container lite cottage cheese, like 1% fat
  • 2 c
    sliced fresh mushrooms
  • 3 c
    light alfredo sauce
  • 6 slice
    provolone cheese
  • 2 tsp
    dried parsley

How To Make healthy alfredo chicken lasagna

    Heat oven to 425. Spray a 9" x 13" baking pan w/ cooking spray. Cook lasagna noodles as directed, drain and cool.

    Place noodles in a bowl w/ 1 tbsp olive oil, to prvent sticking. In lg bowl, combine chicken, tomatoes, onion, and mushrooms. Add cottage cheese, shredded Italian cheese, and garlic. Mix well.

    Ladle 1 scoop alfredo sauce into bottom of pan. Place 3 noodles on top of sauce. Then add a scoop of chicken mix on top of noodles. Repeat layers. Top w/ provolone slices. Sprinkle w/ parsley. Cover pan w/ foil and bake 30 mins. Remove foil and bake 15 min, or until bubbly and cheese is melted.
