I like coconut oil....It has a low heat intolerance and just does well with baking.

Popovers are light and fluffy. They look really elegant, but are easy to do. These were filled with a combination of scrambled eggs, ham and shallots. The batter "Pops over the egg mixture and makes a beautiful presentation. You need a popover pan.
