This is my first two "big globs" of mayonnaise that I added. After mixing it up really well, and tasting it I added two more "big globs" just like them to it...and it was PERFECT! 4/24/13
After I added the boiled and cooled sugar/vinegar mixture into the macaroni this is what it looked like. The liquid is hiding under the mac. There was a lot of liquid; but it ended up perfect. 4/24/13
I do like Horseradish however when using it for a kicker in such recipes you shouldn't be able to identify it as being an ingredient. I was surprised to find out it is in a lot of deli salads using mayo. If you can actually taste it you used too much.
I do not care for horseradish at all, but my Hubby loves a bit of it on some of his sandwiches.
I am glad you liked the recipe.....since finding Helen's recipe I do not make it any other way except for my add in's from time to time.The presoak just makes the salad pop with flavor. I also love putting shredded cheeses in some of it.
I tried this yesterday and the vinegar sugar soak is a plus. I did end up putting in celery also, but no onions. We liked it as a change from our standard Mac Salad. It wasn't as sweet as I thought it would be. I made a half recipe because and have plenty left over. My son the self appointed household food critic says it has lots of possibilities. The presoak peps up the mayo. A deli in our area made a Mac salad with shredded Cheddar Cheese. I put some on one helping of mine and liked that too. I agree with him there is a multitude of possibilities depending on personal taste. It is quite tasty just as it is also. Good recipe, a keeper. Some delis put a dash of horseradish in their mayo dressing. If you try that one moderation is your best friend.

Helen's recipe is awesome as is, but the nice thing about most recipes you can delete or add what your family likes best and make it your own.
The pre-soaking process sounds interesting, I plan to try this. My family is not fond of overly sweet salads such as this, I'm wondering about the amount of sugar. As usual I plan to follow recipe exactly then adjust to our taste in later batches. I like the mixture of green a red peppers in the picture. I wonder if anyone has tried this with onions in it.
