This was sooooo good! Sorry I didn't get a photo as it came out of the oven. We couldn't wait to dive in. I'll share the photos of how this came to be. I used a mix of mozzarella and manchego cheese for the top.
Second Step: Whisk the eggs (I doubled the recipe) with evoo and parmesan cheese. I added just a pinch of Italian seasoning and about 1 TBSP of asiago cheese
