Good with whipped topping too. I bet this cake is great with vanilla ice cream!! hummmmm, I just might have to have another piece tonight...you know, just to test out the ice cream...... :)
I just LOVE this topping! toasty brown. Next time, I'll not toast it as brown, just to see how it tastes. That's what is nice about it...broil it as long as you want it.
This is Jolayne's Oatmeal Cake that I tweeked a little bit; added chocolate chips and sliced walnuts, substituted 1/4 cup of the flour for 1/4 cup finely ground pecans and did not make the frosting, was rich and perfect like it was! Thanks Jolayn.
Johanna, several people have tried it without coconut. They have made it without the topping entirely and have liked it. Others have just added more nuts to replace the coconut and have liked the outcome.
I made this yesterday and it is wonderful. My whole family loved it. The moist cake and the coconut topping are a perfect combination. Thank you for sharing.
