Forgot to take a picture after it came out of the oven and before I frosted it. Anyway, here it is frosted and ready to go tomorrow. Oh my, I can't wait to try it. 10/31/12

I will beat it the full seven minutes next time ... though I originally thought it might be a typo since I can't imagine standing over a bowl with a hand mixer for seven full minutes, lol. But I will certainly do that next time since I now know it makes a difference in the recipe. Thanks again for the comment! I appreciate it: )
hi Kim, they are sweet, however I agree 'very good'! don't know if anyone answered your question about frosting yet? yes it does make a difference when you beat the frosting. it will be a bit thicker and fluffier at the same time depending on how much liquid you wish to add. I ended up making more frosting than the recipe called for cause it was sooo delicious! adding more softened butter, powdered sugar, tasting and beating as I went merrily along. also, I used 2 tsps of lemon juice for liquid, the consistency was perfect!!
Finally got around to making these for a woman's function on Friday. They are very good. VERY SWEET, but very good. I'm glad I used the 9x13 size pan that you suggested .. because I thought they were plenty thick enough for a lemon bar. Only thing is I mixed all the ingredients together by hand for the frosting and only realized later that I should have mixed for several minutes before adding lemon juice, etc. Does the mixing make a big difference in the consistency & quality? Everyone loved them ... but I'll be making again for a Ladies Tea in a few weeks & will make sure to follow recipe exactly.
