great time for the chef and guest to enjoy some grapes until the beef is ready! You have 10 minutes so enjoy a toast or two and build the anticipation!
rub/pat each side with pepper, paprika and a heavy coating of the kosher salt...you might think that is a ton of salt, but trust me...it locks in the juice and the kosher salt imparts a world class flavor to the filet
finished product with bread, "my" spinich maria, some tomatos...and of course, don't forget the wine...see the photo of my "clean plate" club for proof of flavor!
