This Is My Version Of This Wonderful, Moist And Delicious Cake.. I Did Not Have Any Walnuts, So I Substitued Pecans Instead.. I Also Used Splenda Instead Of Sugar And Egg Beaters Instead Of Eggs. Anytime I Can Cut Calories, I Do It! The Results Were Great.. :) I Also Used A Canned Cream Cheese Frosting Instead Of The Homemade, I Got Lazy.
This is my version of this wonderful, moist and delicious cake.. I did not have any walnuts, so I substitued pecans instead.. I also used Splenda instead of Sugar and egg beaters instead of eggs. Anytime I can cut calories, I do it! The results were great.. :) I also used a Canned Cream Cheese Frosting instead of the homemade, I got lazy.

Hi, Terry. You can buy yhe Lorann flavorings on-line. I have also seen them in the store where I buy chocolate making supplies, but not a big variety there. I usually use a 350° oven and put the coconut on a sheet of aluminum foil. Watch it carefully. It can go from golden to burnt in a heartbeat. lorannoils.com

Hi Thea,
I like cream cheese frosting but this sounds great too for a variety. Where can you find the Lorann Super Strength Pina Colada flavoring? I have never toasted cococut either. How much do you use for this and do you just sprinkle it on a baking sheet and put in oven on about 300? Thank you for your reply!

Gee, LaWanda-I would if I had one...lol. I used about a cup of powdered sugar mixed with a little milk. Just add a tablespoon at a time until it's the right consistency-a little runny to run down the sides of the cake. Then I added a couple of drops of Lorann super strength pina colada flavoring.

It's toasted coconut. I'm not big on cream cheese frosting so I just made a pina colada glaze and then sprinkled on the coconut.
