Denise you can use any milk you choose but you can't taste the coconut milk. Cashew milk is also good, And if you do use dairy evaporated milk is my go to.

Dani Settle, is there something that I can substitute for the coconut milk. I am not a big fan of coconut flavoring. I welcome your suggestions, because I would love to try this.

Patti, I usually bake my squash whole at 350 for 90 minutes, I score them and when they cool I just scoop out the meat. Easy peasy. Please let me know of your success. Happy Thanksgiving to you and your family.

Dani: I love the different combo of nuts! Just started baking with butternut squash, and I was surprised how much my family enjoys it. I have just baked before, with sprinkle of brown sugar, butter and cinnamon...the smell was heavenly! Thank you again for this recipe and have a blessed Thanksgiving with your family!

Patti you are very welcome, it is a very yummy recipe and know you will fall in love with it. There are some many things you can do with it. I am going to add dried cranberries to it for Thanksgiving.

Here is the recipe Ladies hope you enjoy.

BUTTERNUT SQUASH BREAD

• 2 2/3 cups white sugar
• 2/3 cup soften coconut oil
• 2 cups pureed cooked butternut squash
• 4 eggs
• 2/3 cup coconut milk
• 3 1/3 cups Bread flour
• 2 teaspoons baking soda
• 2 teaspoons baking powder
• 1 1/2 teaspoons salt
• 1 teaspoon ground cinnamon
• 1 teaspoon ground cloves
• 2/3 cup chopped walnuts,pecans,cashews, macadamia (I like to use a combination of nuts)

• Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
• Beat sugar and shortening together in a bowl until fluffy. Stir butternut squash, eggs, and milk into sugar mixture.
• Mix flour, baking soda, baking powder, salt, cinnamon, and cloves in another bowl; stir into sugar mixture. Add nuts, stir until batter is just blended. Pour batter into prepared loaf pans.
• Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour 15 minutes. Cool in the pans for 15 minutes before removing to cool completely on a wire rack.
