I was on a mission to make a beef soup today, OMG it turned out so good! I dont usually use a recipe but I decided to write this one down because I want to make it again and again! It was sooooo delicious!

Method:
Slow Cooker Crock Pot

Ingredients

2-3 lb
beef tip roast or equivalent
1 c
celery-chopped
6 large
carrots, chopped
4 medium
potatoes, peeled and chopped
1
sweet potato, peeled and chopped
1 large
onion, peeled and chopped
16 oz
mushrooms, cut in half
1 large
green pepper chopped
5 small
red or yellow sweet peppers
1 qt
canned tomatoes
3
bay leaves
1 Tbsp
marjoram
1 Tbsp
basil, dried
1 Tbsp
red pepper flakes
4 Tbsp
beef bouillon
salt and pepper
1 qt
water
3-5 Tbsp
thai chili sauce

Step-By-Step

1Chop all ingredients that need to be chopped.
2Layer in a crock pot. End with the meat and the spices on top.
3Cook on low 5 hours. Give a good stir before serving.
4Serve with some chopped cilantro, a dollop of Ricotta Cheese and some good quality olive oil. YUM!
