My Uncle Wiley lives in Winter Haven Florida. We try to visit him a couple of times a year. I love to cook, so I cook while I am there, unless we are going to some of the great restaurants in the area. But he makes the best Chicken Salad I have ever eaten. I brought this recipe home with me. My family and friends absolutely love it, so I thought that I would share it with you.

Yum! The addition of sour cream adds a delicious tang that we can't get enough of! Delightful.

poached chicken (diced)
1 c
celery (finely chopped)
1 c
pecans (chopped)
1 c
1 1/2 c
white seedless grapes (cut in fourths)
1 c
white raisins
4 oz
sour cream
1 c
Kraft mayonnaise
salt and black pepper, to taste

Directions Step-By-Step

Poach chicken (boneless skinless) breast. This takes the longest amount of time, I often cook my chicken the day before and store it in a Ziplock bag in the fridge. When you are ready to make the salad you dice the chicken
In a large bowl mix all of the ingredients; salt and pepper to taste. You may need a little more mayonnaise.
I serve it with crackers, or it makes a great sandwich with lettuce and tomatoes.

I have made this quite often through the years and never the same twice in a row! Use whatever fruit (apples, grapes, pineapple) and nuts (pecans, walnuts, almonds) I have. I also add some cumin which gives it a little pow and celery.

I am making this recipe again and again this time for my first grandchild ' s baby shower. I omit the craisins I find they make this salad too sweet.

This is a fantastic chicken salad! The best I've ever had. It will become a classic in my house. I used light mayo and sour cream and it was still sensational. Great job Uncle Wiley!

If you don't want to poach the chicken or are in a hurry, a rotisserie chicken from your local grocer works very well and the bones, skin, etc. boiled with water makes a really good chicken broth!
