Ingredients

4 c poached chicken (diced)
1 c celery (finely chopped)
1 c pecans (chopped)
1 c Craisins
1 1/2 c white seedless grapes (cut in fourths)
1 c white raisins
4 oz sour cream
1 c Kraft mayonnaise
salt and black pepper, to taste

Debbie's Notes:

My Uncle Wiley lives in Winter Haven Florida. We try to visit him a couple of times a year. I love to cook, so I cook while I am there, unless we are going to some of the great restaurants in the area. But he makes the best Chicken Salad I have ever eaten. I brought this recipe home with me. My family and friends absolutely love it, so I thought that I would share it with you.

Yum! The addition of sour cream adds a delicious tang that we can't get enough of! Delightful.

 

Directions

Poach chicken (boneless skinless) breast. This takes the longest amount of time, I often cook my chicken the day before and store it in a Ziplock bag in the fridge. When you are ready to make the salad you dice the chicken

In a large bowl mix all of the ingredients; salt and pepper to taste. You may need a little more mayonnaise.

I serve it with crackers, or it makes a great sandwich with lettuce and tomatoes.

Debbie, thank you for posting this recipe! I had a chicken salad at a fancy party that was done by caterers that I loved. This sounds exactly like it! I can't wait to make it!

do you think it would be good with walnuts instead of pecans - don't really care for pecans but don't want to leave nuts out completely??

May be a dumb question, but how do you "poach" chicken? And how long do you cook it?

I use this same recipe except I add apples to mine and lightly toast my pecans
