My dad's mother, my grandma, used to fix Corned Beef and Cabbage with cornbread for him when he was younger, one of his favorite meals. I took the recipe and changed it up a little and my dad, my family and friends love it. Hope your family and friends love it too. This recipe is a good stick to your ribs meal.

The cook time on this recipe is more of a long term simmer, over a long period of time.

Fried cabbage... YUM! Pretty much the perfect meal for St. Patrick's Day... or any day!

Ingredients

2 can(s)
canned corned beef (preferably Libby)
2 - 4
heads of cabbage (chopped into bite size squares)
1 stick
butter (or 4 tablespoons of country crock butter)
2 Tbsp
sugar
1/2 tsp
salt (do not over salt, corned beef is salty too!)
1 Tbsp
black pepper
2 box
Jiffy corn muffin mix (mix and bake cornbread or muffins as directed)

Thank you two for the info! I will look in Wal-Mart for the pint, I know I have never seen the 8oz. Size in the stores where I shop. Most of what I see are the quart size, 1/2 gallon and gallon. I did not know it could be frozen, glad to learn that. I love this website. People like you all are so willing to help others. Bless you!

Not sure where you live, but they do sell "One Pint" containers of whole milk in some stores, I think Wal-mart sells them.

At some stores they have an individual size and it can be frozen for later use. I freeze buttermilk in one cup containers.

Thanks Martha, this must be my problem. I just never buy whole milk but I see I need to but it for this cornbread . Do you know what the smallest size is that I could buy?
