Grandma Delleplain Apricot filling

- 2 c
- apricots peeled and seeded cut into halfs
- 1-2 c
- 2/3 c
- 1 Tbsp
- lemon juice
- 1/2 tsp
- greded lemon rind
1Peel and seed the apricots and cook in just enough water to cover until tender and practically dry. Beat apricots until smooth.
2Add sugar, lemon juice and grated lemon rind and cook until sugar has entirely dissolved. Let cool this will make enough filling for a 3-layer cake.
