Just looking for things to do with summer squash. I calculated this at 8 servings and 41 calories per serving, without yogurt garnish.

  • 4 large
    yellow squash
  • 3 clove
  • 6 c
    chicken or vegetable broth
  • 1 Tbsp
    dried thyme
  • 1 Tbsp
    dried tarragon
  • 1 tsp
    crushed red pepper
  • ·
    salt and black pepper to taste

How to Make Yellow Squash Soup


  1. Cut squash into chunks.
  2. Peel garlic
  3. Add all ingredients to the soup pot.
  4. Boil until squash is tender.
  5. Reserving broth, transfer squash and garlic to blender.
  6. Blend until smooth - add broth to blender if necessary.You may need to do this in two steps depending upon the size of your blender.
  7. Return the squash to the broth, stir it together.
  8. You may want to garnish with a dollop of greek yogurt.
