Ingredients
- 4 large yellow squash
- 3 cloves garlic
- 6 cups chicken or vegetable broth
- 1 tablespoon dried thyme
- 1 tablespoon dried tarragon
- 1 teaspoon crushed red pepper
- - salt and black pepper to taste
How To Make yellow squash soup

Step 1Cut squash into chunks.

Step 2Peel garlic

Step 3Add all ingredients to the soup pot.

Step 4Boil until squash is tender.

Step 5Reserving broth, transfer squash and garlic to blender.

Step 6Blend until smooth - add broth to blender if necessary.You may need to do this in two steps depending upon the size of your blender.

Step 7Return the squash to the broth, stir it together.

Step 8You may want to garnish with a dollop of greek yogurt.
