Ingredients

Add to Grocery List

4 large
yellow squash
3 clove
garlic
6 c
chicken or vegetable broth
1 Tbsp
dried thyme
1 Tbsp
dried tarragon
1 tsp
crushed red pepper
salt and black pepper to taste

How to Make Yellow Squash Soup

Step-by-Step

  • 1Cut squash into chunks.
  • 2Peel garlic
  • 3Add all ingredients to the soup pot.
  • 4Boil until squash is tender.
  • 5Reserving broth, transfer squash and garlic to blender.
  • 6Blend until smooth - add broth to blender if necessary.You may need to do this in two steps depending upon the size of your blender.
  • 7Return the squash to the broth, stir it together.
  • 8You may want to garnish with a dollop of greek yogurt.
