Just looking for things to do with summer squash. I calculated this at 8 servings and 41 calories per serving, without yogurt garnish.

Ingredients

  • 4 large yellow squash
  • 3 cloves garlic
  • 6 cups chicken or vegetable broth
  • 1 tablespoon dried thyme
  • 1 tablespoon dried tarragon
  • 1 teaspoon crushed red pepper
  • - salt and black pepper to taste

How To Make yellow squash soup

  • Step 1
    Cut squash into chunks.
  • Step 2
    Peel garlic
  • Step 3
    Add all ingredients to the soup pot.
  • Step 4
    Boil until squash is tender.
  • Step 5
    Reserving broth, transfer squash and garlic to blender.
  • Step 6
    Blend until smooth - add broth to blender if necessary.You may need to do this in two steps depending upon the size of your blender.
  • Step 7
    Return the squash to the broth, stir it together.
  • Step 8
    You may want to garnish with a dollop of greek yogurt.
