Just looking for things to do with summer squash. I calculated this at 8 servings and 41 calories per serving, without yogurt garnish.

Ingredients For yellow squash soup

4 lgyellow squash

3 clovegarlic

6 cchicken or vegetable broth

1 Tbspdried thyme
-
1 Tbspdried tarragon
-
1 tspcrushed red pepper

salt and black pepper to taste
How To Make yellow squash soup

1Cut squash into chunks.

2Peel garlic

3Add all ingredients to the soup pot.

4Boil until squash is tender.

5Reserving broth, transfer squash and garlic to blender.

6Blend until smooth - add broth to blender if necessary.You may need to do this in two steps depending upon the size of your blender.

7Return the squash to the broth, stir it together.

8You may want to garnish with a dollop of greek yogurt.
