- Cut squash into chunks.
- Peel garlic
- Add all ingredients to the soup pot.
- Boil until squash is tender.
- Reserving broth, transfer squash and garlic to blender.
- Blend until smooth - add broth to blender if necessary.You may need to do this in two steps depending upon the size of your blender.
- Return the squash to the broth, stir it together.
- You may want to garnish with a dollop of greek yogurt.
