How to Make Yellow Squash Soup
- 1Cut squash into chunks.
- 2Peel garlic
- 3Add all ingredients to the soup pot.
- 4Boil until squash is tender.
- 5Reserving broth, transfer squash and garlic to blender.
- 6Blend until smooth - add broth to blender if necessary.You may need to do this in two steps depending upon the size of your blender.
- 7Return the squash to the broth, stir it together.
- 8You may want to garnish with a dollop of greek yogurt.
