Ingredients
- 2 1/2 - 3 pounds sweet italian sausage, sliced
- 3 cups red potatoes, peeled and cubed
- 1 cup celery, chopped
- 1 cup carrots, sliced
- 1 medium onion, chopped
- 28 ounces can whole tomatoes, undrained and chopped
- 8 cups beef broth
- 1 teaspoon brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 cups shredded cabbage
- 1 cup fine egg noodles, uncooked
- freshly grated parmesan cheese, to garnish
How To Make winter sausage soup

Step 1Brown the sausage in a large Dutch oven over medium heat until done. Drain well, and set aside. Wipe the pan out with paper towels.

Step 2Return the sausage to the pan. Add the potatoes and the next 8 ingredients (through black pepper). Bring to a boil; cover, and reduce heat and simmer for 1 hour.

Step 3Add the cabbage and noodles. Cover and simmer for an additional 15 minutes.

Step 4To serve, ladle the soup into bowls. Sprinkle with freshly grated Parmesan cheese.
