Ingredients
- 2 tablespoons olive oil
- 1 - white onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup carrots, chopped
- 3 cups sliced white mushrooms
- 1 cup white wine or low-sodium, fat-free chicken broth
- 5 cups low sodium, fat- free chicken broth
- 2 cups fat-free half-and-half
- 4 tablespoons flour
- 1/2 teaspoon dried thyme
- To taste - black pepper
- 2 cups cooked wild rice(usually cook night before)
How To Make wild rice mushroom soup

Step 1Put olive oil in stockpot and bring to medium heat

Step 2Add chopped onion, celery and carrots. Cook until tender.

Step 3Add mushrooms, white wine and chicken broth. Cover and heat through.

Step 4In a bowl, blend half-and-half, flour, thyme and pepper.

Step 5Then stir in cooked wild rice.

Step 6Pour rice Mixture into hot stockpot with vegetables.

Step 7Cook over medium heat. Stir continually until thickened and bubbly.
