A MAYO CLINIC healthy recipe. Nothing is healthier than recipes from the Mayo Clinic. And absolutely delicious. Have made it many times and feel so healthy after we have it.

Ingredients

  • 2 tablespoons olive oil
  • 1 - white onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, chopped
  • 3 cups sliced white mushrooms
  • 1 cup white wine or low-sodium, fat-free chicken broth
  • 5 cups low sodium, fat- free chicken broth
  • 2 cups fat-free half-and-half
  • 4 tablespoons flour
  • 1/2 teaspoon dried thyme
  • To taste - black pepper
  • 2 cups cooked wild rice(usually cook night before)

How To Make wild rice mushroom soup

  • Step 1
    Put olive oil in stockpot and bring to medium heat
  • Step 2
    Add chopped onion, celery and carrots. Cook until tender.
  • Step 3
    Add mushrooms, white wine and chicken broth. Cover and heat through.
  • Step 4
    In a bowl, blend half-and-half, flour, thyme and pepper.
  • Step 5
    Then stir in cooked wild rice.
  • Step 6
    Pour rice Mixture into hot stockpot with vegetables.
  • Step 7
    Cook over medium heat. Stir continually until thickened and bubbly.
