Ingredients

  • 2 Tbsp
    olive oil
  • 1
    white onion, chopped
  • 1/2 c
    celery, chopped
  • 1/2 c
    carrots, chopped
  • 3 c
    sliced white mushrooms
  • 1 c
    white wine or low-sodium, fat-free chicken broth
  • 5 c
    low sodium, fat- free chicken broth
  • 2 c
    fat-free half-and-half
  • 4 Tbsp
    flour
  • 1/2 tsp
    dried thyme
  • To taste
    black pepper
  • 2 c
    cooked wild rice(usually cook night before)

How to Make Wild Rice Mushroom Soup

Step-by-Step

  1. Put olive oil in stockpot and bring to medium heat
  2. Add chopped onion, celery and carrots. Cook until tender.
  3. Add mushrooms, white wine and chicken broth. Cover and heat through.
  4. In a bowl, blend half-and-half, flour, thyme and pepper.
  5. Then stir in cooked wild rice.
  6. Pour rice Mixture into hot stockpot with vegetables.
  7. Cook over medium heat. Stir continually until thickened and bubbly.
