watercress & tamari soup
This is pictured with baby spinach instead of watercress, as apparently it is still out of season in Michigan so I couldn't get it. I got this recipe from a healthy cooking cook book that someone gave me back in the early 90's. I can't remember the name of the book, but I sure wish I could. I used it a lot. It had some really nice recipes in it. If you know this recipe from a cook book that came out in the early 90's, send me a message! Anyway, this soup is really great when you want a simple dish to add a bit more veg. to your meal. It also makes a nice starter for Asian themed meals. Enjoy!

Ingredients
- 1 bunch fresh watercress
- 8 ounces fresh mushrooms, sliced
- 8 cups chicken stock
- 1/4 cup tamari sauce
How To Make watercress & tamari soup

Step 1Sort and wash watercress and break off stems.

Step 2Meanwhile in a large saucepan, simmer chicken stock for 5 minutes then add mushrooms and simmer 5 more minutes.

Step 3Add watercress and simmer 5 minutes more. Add tamari and ladle into soup bowls.
