I came up with this recipe based on all the left over veggies from last year....LOL like 3 days ago...Simply delicious!

Ingredients

  • 6 c
    broth
  • 1/2
    onion, chopped
  • 1/2
    green pepper, chopped
  • 3
    garlic cloves, smashed
  • 1
    zuchinni, chopped
  • 1
    celery stalk, chopped
  • 1 bunch
    asparagus, chopped
  • 1 c
    cabbage, chopped
  • 1 large
    carrot, chopped
  • 1 can(s)
    fire roasted tomatoes
  • 1 can(s)
    dark kidney beans, drained
  • 1 Tbsp
    olive oil
  • bunch
    parsey
  • bunch
    cilantro
  • 1/4 c
    orzo pasta, uncooked
  • ·
    salt/pepper to taste

How to Make Veggie Orzo Soup

Step-by-Step

  1. In a large pot, saute onions, peppers, zucchini, carrots, asparagus and cabbage for 5 mins.
  2. add in the rest of the ingredients and simmer 30 mins, stirring occasionally so pasta doesn't stick.
  3. serve with shavings of Manchego or Parmesan cheese.
