I came up with this recipe based on all the left over veggies from last year....LOL like 3 days ago...Simply delicious!

green pepper, chopped
garlic cloves, smashed
celery stalk, chopped
fire roasted tomatoes
dark kidney beans, drained
orzo pasta, uncooked
salt/pepper to taste
How To Make
In a large pot, saute onions, peppers, zucchini, carrots, asparagus and cabbage for 5 mins.
add in the rest of the ingredients and simmer 30 mins, stirring occasionally so pasta doesn't stick.
serve with shavings of Manchego or Parmesan cheese.
