veggie orzo soup
I came up with this recipe based on all the left over veggies from last year....LOL like 3 days ago...Simply delicious!

Ingredients
- 6 cups broth
- 1/2 - onion, chopped
- 1/2 - green pepper, chopped
- 3 - garlic cloves, smashed
- 1 - zuchinni, chopped
- 1 - celery stalk, chopped
- 1 bunch asparagus, chopped
- 1 cup cabbage, chopped
- 1 large carrot, chopped
- 1 can fire roasted tomatoes
- 1 can dark kidney beans, drained
- 1 tablespoon olive oil
- bunch parsey
- bunch cilantro
- 1/4 cup orzo pasta, uncooked
- - salt/pepper to taste
How To Make veggie orzo soup

Step 1In a large pot, saute onions, peppers, zucchini, carrots, asparagus and cabbage for 5 mins.

Step 2add in the rest of the ingredients and simmer 30 mins, stirring occasionally so pasta doesn't stick.

Step 3serve with shavings of Manchego or Parmesan cheese.
