veggie matzo ball soup
I'm allergic to Chicken so I made this for Hanukkah. And it turned out super YUMMY!

Ingredients
- 2 boxes manischewitz matzo ball mix
- 4 boxes 32 oz veggie broth
- 2 cans cut carrots
- 1 onions, vidalia, peeled & diced
How To Make veggie matzo ball soup

Step 1Follow directions for the Matzo Ball Mix. Using all packages in the boxes. set mixture aside in fridge as directed.

Step 2In a large pot. Open and pour in all 4 boxes of Vegetable Broth. Add onion. Drain both cans of carrots and add. Set to boil. (Optional chopped celery)

Step 3Once at a boil make your matzo balls. (Again following direction on the box) and add to broth as directed. Cover lower to simmer and cook 20 mins.

Step 4Once cooked you can add spices to taste. I added salt & pepper and a little parsley and some Ms. Dash. (Optional a smidge of garlic or dill weed)

Step 5You can add chicken, turkey or even noodles. Adapt it your tastes!
