Ingredients

  • 3 cups water
  • 3 cups chicken broth
  • 1 medium onion, diced
  • 2 - garlic cloves, smashed
  • 1 can tomatoes, canned italian-style and diced
  • 1 can kidney beans, drained
  • 1 can white beans, drained
  • 1 package spinach, fresh
  • 1 medium zuchinni, cut into bite size pieces
  • 1 medium broccoli florets, fresh
  • - salt/pepper to taste
  • - parmesan cheese & croutons for garnish, if desired

How To Make veggie-bean soup

  • Step 1
    combine water and chicken broth, bring to a boil
  • Step 2
    add all the ingredients ( remember to drain the beans) except the parmesan cheese.
  • Step 3
    simmer about 20 mins....garnish with the parmesan cheese and croutons, if desired
