I love Pappasito's Mexico City Soup, but try to stay away from meat as much as possible. So, I created this very awesome soup without the chicken for my vegetarian/vegan friends and family. It is warm, filling and makes everyone happy. For a non vegetarian recipe, boil chicken and chop in chunks inside each bowl

Ingredients
- 2 packages vegetable broth
- 5 medium carrots
- 2 medium celery stalk
- 3 tablespoons cumin seed
- 1 bunch cilantro
- 1 medium onion
- 1 large avocado
- 1 large jalapeno peppers
- 1 bunch fresh cilantro
How To Make vegetarian mexico city soup

Step 1Boil celery, carrots, and cumin in broth until tender.

Step 2Chop jalapenos, onions, avocado, cilantro and tomatoes and put in individual bowls.

Step 3Fill bowls with hot broth. Have each person add their favorite sides
