I love Pappasito's Mexico City Soup, but try to stay away from meat as much as possible. So, I created this very awesome soup without the chicken for my vegetarian/vegan friends and family. It is warm, filling and makes everyone happy. For a non vegetarian recipe, boil chicken and chop in chunks inside each bowl

vegetable broth
5 medium
carrots
2 medium
celery stalk
3 Tbsp
cumin seed
1 bunch
cilantro
1 medium
onion
1 large
avocado
1 large
jalapeno peppers
1 bunch
fresh cilantro

How to Make Vegetarian Mexico City Soup

Step-by-Step

  • 1Boil celery, carrots, and cumin in broth until tender.
  • 2Chop jalapenos, onions, avocado, cilantro and tomatoes and put in individual bowls.
  • 3Fill bowls with hot broth. Have each person add their favorite sides
