Ingredients
- 8 cups v8 juice®, classic or spicy
- 3 tablespoons arrowroot powder
- 1 15 ounce cans crushed tomatoes
- 1 tablespoon kosher salt
- - chopped flatleaf parsley [for garnish]
- - sour cream [for garnish]
How To Make v8 soup

Step 1Dissolve arrowroot powder in a 1/4 cup of lukewarm water.

Step 2Place V8 Juice®, crushed tomatoes and kosher salt in large pan and bring to boil. Reduce by a quarter; about 7 minutes.

Step 3Reduce heat to a simmer and stir in arrowroot mixture and cook for another 3 to 4 minutes until "soup" thickens.

Step 4Garnish with sour cream and chopped parsley. Enjoy!
