Ingredients
- 2 tablespoons olive oil
- 1 - onion, chopped
- 3 teaspoons minced garlic
- 5 cups water
- 3-1/2 cups lower-sodium chicken broth
- 1 - 12 oz pkg dried lentils
- 3 - carrots, finely chopped
- 1 - bay leaf
- 1 teaspoon salt
- 3/4 teaspoon pepper
How To Make simply healthy lentil soup

Step 1In lg pot, heat oil over medium heat. Saute onion and garlic in oil 3 mins. Add water, chicken broth, lentils, carrots, bay leaf, salt & pepper.

Step 2Bring to a boil. Reduec heat to low. Cover and simmer 45 mins, or until lentils are tender.

Step 3You can add chopped smoked ham to this while it simmers. I serve this with a crusty bread like french bread.
