Ingredients

  • 2 tablespoons olive oil
  • 1 - onion, chopped
  • 3 teaspoons minced garlic
  • 5 cups water
  • 3-1/2 cups lower-sodium chicken broth
  • 1 - 12 oz pkg dried lentils
  • 3 - carrots, finely chopped
  • 1 - bay leaf
  • 1 teaspoon salt
  • 3/4 teaspoon pepper

How To Make simply healthy lentil soup

  • Step 1
    In lg pot, heat oil over medium heat. Saute onion and garlic in oil 3 mins. Add water, chicken broth, lentils, carrots, bay leaf, salt & pepper.
  • Step 2
    Bring to a boil. Reduec heat to low. Cover and simmer 45 mins, or until lentils are tender.
  • Step 3
    You can add chopped smoked ham to this while it simmers. I serve this with a crusty bread like french bread.
