This is an easy, healthy, tasty soup.

    olive oil
  • 1
    onion, chopped
  • 3 tsp
    minced garlic
  • 5 c
  • 3-1/2 c
    lower-sodium chicken broth
  • 1
    12 oz pkg dried lentils
  • 3
    carrots, finely chopped
  • 1
    bay leaf
  • 1 tsp
  • 3/4 tsp

How to Make Simply healthy lentil soup


  1. In lg pot, heat oil over medium heat. Saute onion and garlic in oil 3 mins. Add water, chicken broth, lentils, carrots, bay leaf, salt & pepper.
  2. Bring to a boil. Reduec heat to low. Cover and simmer 45 mins, or until lentils are tender.
  3. You can add chopped smoked ham to this while it simmers. I serve this with a crusty bread like french bread.
