Simply healthy lentil soup

1onion, chopped

3 tspminced garlic

5 cwater

3-1/2 clower-sodium chicken broth

112 oz pkg dried lentils

3carrots, finely chopped

1bay leaf
-
1 tspsalt

3/4 tsppepper
How to Make Simply healthy lentil soup
- In lg pot, heat oil over medium heat. Saute onion and garlic in oil 3 mins. Add water, chicken broth, lentils, carrots, bay leaf, salt & pepper.
- Bring to a boil. Reduec heat to low. Cover and simmer 45 mins, or until lentils are tender.
- You can add chopped smoked ham to this while it simmers. I serve this with a crusty bread like french bread.
