    dry lentils
  • 2 medium
    yellow onions
  • 4
  • 1
    bay leaf
  • 1 pkg
    cleaned fresh spinach
  • 3 Tbsp
    virgin olive oil
  • 3 Tbsp
  • 1 Tbsp
  • 1/2 box
    cooked ditalini pasta
  • 1/4 c
    parmigiano-reggiano, grated

How to Make sicillian lentil soup


  1. Soak lentils in cold water and remove skins that come to the top. Peel the carrots and dice.Add all ingredients (except pasta and cheese)to a large pot, bring to a boil then cook on low heat for 1 1/2-2 hours.
  2. Once the soup is ready add the cooked pasta, blend and add the grated cheese to top it off.
