My 5 grown children are always asking me to prepare it for them. It's been a big hit with friends as well.I like to make extra and have it as a leftover snack for days

Ingredients

  • 4 Qts - water
  • 1 Pkg - dry lentils
  • 2 medium yellow onions
  • 4 - carrots
  • 1 - bay leaf
  • 1 package cleaned fresh spinach
  • 3 tablespoons virgin olive oil
  • 3 tablespoons salt
  • 1 tablespoon pepper
  • 1/2 box cooked ditalini pasta
  • 1/4 cup parmigiano-reggiano, grated

How To Make sicillian lentil soup

  • Step 1
    Soak lentils in cold water and remove skins that come to the top. Peel the carrots and dice.Add all ingredients (except pasta and cheese)to a large pot, bring to a boil then cook on low heat for 1 1/2-2 hours.
  • Step 2
    Once the soup is ready add the cooked pasta, blend and add the grated cheese to top it off.
