Ingredients
- 4 Qts - water
- 1 Pkg - dry lentils
- 2 medium yellow onions
- 4 - carrots
- 1 - bay leaf
- 1 package cleaned fresh spinach
- 3 tablespoons virgin olive oil
- 3 tablespoons salt
- 1 tablespoon pepper
- 1/2 box cooked ditalini pasta
- 1/4 cup parmigiano-reggiano, grated
How To Make sicillian lentil soup

Step 1Soak lentils in cold water and remove skins that come to the top. Peel the carrots and dice.Add all ingredients (except pasta and cheese)to a large pot, bring to a boil then cook on low heat for 1 1/2-2 hours.

Step 2Once the soup is ready add the cooked pasta, blend and add the grated cheese to top it off.
