Shrimp & Bacon Gumbo
8 slicebacon, cut into 1-inch pieces
1/2 cchopped celery
1/2 cchopped onion
1/2 cchopped bell pepper
6 cbroth or water
1 pkgzatarain's gumbo mix with rice
2 csliced fresh or frozen okra
1 lbmedium shrimp, peeled and deveined
1/4 cchopped green onions
How to Make Shrimp & Bacon Gumbo
- Cook bacon in dutch oven or large saucepan on medium-high heat until crisp. Add celery, onion, and bell pepper. Cook and stir 3 minutes until vegetables begin to soften.
- Stir in broth or water, and Zatarain's Mix. Bring to a boil. Reduce heat to low; cover and simmer 15 minutes. Add okra and shrimp; cook 10 minutes longer or until rice is tender and shrimp turn pink, stirring occasionally.
- Sprinkle each serving with green onions.
