Ingredients
- 2 cups chicken broth
- 1 can tomato-vegetable juice cocktail, 11.5 oz
- 1 cup water
- 1 large potato, diced
- 2 - carrots, sliced
- 2 - celery stalks, sliced
- 1 can diced tomatoes, 14.5oz
- 1 cup fresh green beans, chopped
- 1 cup fresh corn kernels
- - salt and pepper, to taste
- - creole seasoning, to taste-i use konrico
How To Make quick and easy vegetable soup

Step 1In a large stock pot, combine broth, tomato juice, water, potatoes, carrots, celery, green beans, and corn. Season with salt and pepper and Creole seasoning. Bring to a boil. Reduce to simmer for 30 minutes or until all vegetables are tender.
