A low calorie, filling, tomato based, vegetable soup. I use fresh vegetables when in season, frozen or canned otherwise.

    chicken broth
  • 1 can(s)
    tomato-vegetable juice cocktail, 11.5 oz
  • 1 c
  • 1 large
    potato, diced
  • 2
    carrots, sliced
  • 2
    celery stalks, sliced
  • 1 can(s)
    diced tomatoes, 14.5oz
  • 1 c
    fresh green beans, chopped
  • 1 c
    fresh corn kernels
  • ·
    salt and pepper, to taste
  • ·
    creole seasoning, to taste-i use konrico

How to Make Quick and Easy Vegetable Soup


  1. In a large stock pot, combine broth, tomato juice, water, potatoes, carrots, celery, green beans, and corn. Season with salt and pepper and Creole seasoning. Bring to a boil. Reduce to simmer for 30 minutes or until all vegetables are tender.
