quick and easy cabbage and bean soup

This soup is so great on a cold day! The beans are my addition, to make it a complete meal in a bowl. Satisfying, delicious and easy! Enjoy

Ingredients

  • 3 cups vegetable broth
  • 3 cups water
  • 3 or more cups red or green cabbage, chopped
  • 3 - carrot, sliced
  • 3 - celery ribs, chopped
  • 3 to 4 cloves garlic, minced
  • 1 - medium onion, chopped
  • 1 teaspoon better than bouillion garlic base
  • 1 teaspoon better than bouillioin seasoned vegetable baseed vegetable
  • 1 can white beans
  • 1 tablespoon apple cider vinegar (optional)
  • 1/8 teaspoon red pepper flakes (optional)

How To Make quick and easy cabbage and bean soup

  • Step 1
    add all but the beans and vinegar, if using, to a soup kettle and simmer till veggies are tender.
  • Step 2
    During the last 10 minutes or so, add in the beans and vinegar. Taste before adding salt or pepper. Add whatever other spices or herbs you might like.. It's especially good with a little dill added..
  • Step 3
    serve it with a nice salad and some grainy bread for a delicious, nutritious and satisfying lunch or supper..
