The first time I made this we did it without meat, the second time I used pork loin, the next time I used chicken.... chicken is my favorite so far (I've done it that way several times) but I think next I'm going to use ham hocks and bacon.

Ingredients

  • 6 medium potatoes, cut up
  • 1 cup onion, chopped
  • 3 large carrots, sliced
  • 4 cups broth, whichever type goes with your choice of meat, if not using meat use chicken broth
  • 1/2 teaspoon dried basil
  • 1 teaspoon parsley flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 stalks celery, thinly sliced
  • 1/4 cup flour (or 3 tbsp cornstarch)
  • 1/2 pound meat of choice (optional)
  • 1 1/4 cups milk

How To Make potato stew

  • Step 1
    Combine vegetables, spices and broth in slow cooker.
  • Step 2
    If using meat, cut into desired sized pieces and add to slow cooker. If using bacon do not do this.
  • Step 3
    In separate bowl, combine milk and flour/cornstarch, then add to slow cooker.
  • Step 4
    Let cook on medium or high setting four about 4 1/2 to 5 hours.
  • Step 5
    If using bacon, cook bacon in skillet. Break/cut into pieces and add to stew after stew has cooked for at least 4 hours.
  • Step 6
    Serve with crackers or biscuits.
