The first time I made this we did it without meat, the second time I used pork loin, the next time I used chicken.... chicken is my favorite so far (I've done it that way several times) but I think next I'm going to use ham hocks and bacon.

Slow Cooker Crock Pot

Ingredients
- 6 medium potatoes, cut up
- 1 cup onion, chopped
- 3 large carrots, sliced
- 4 cups broth, whichever type goes with your choice of meat, if not using meat use chicken broth
- 1/2 teaspoon dried basil
- 1 teaspoon parsley flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 stalks celery, thinly sliced
- 1/4 cup flour (or 3 tbsp cornstarch)
- 1/2 pound meat of choice (optional)
- 1 1/4 cups milk
How To Make potato stew

Step 1Combine vegetables, spices and broth in slow cooker.

Step 2If using meat, cut into desired sized pieces and add to slow cooker. If using bacon do not do this.

Step 3In separate bowl, combine milk and flour/cornstarch, then add to slow cooker.

Step 4Let cook on medium or high setting four about 4 1/2 to 5 hours.

Step 5If using bacon, cook bacon in skillet. Break/cut into pieces and add to stew after stew has cooked for at least 4 hours.

Step 6Serve with crackers or biscuits.
