This authentic soup gets right to the heart of things. It is a simple French countryside recipe that is herb-y, savory yet light. You can tell I am French and Italian by that I made this and served it with Bruschetta dalla Campagna. (see recipe)

Ingredients
- 3 - purple or red onions, sliced
- 3 - white onions, sliced
- 4-5 cups mustard greens
- 4 cups chicken or turkey broth
- 6 cups water
- 2 tablespoons tarragon
- 1 tablespoon parsley
- 1 teaspoon herbes de provence (optional)
- 1 tablespoon garlic, chopped
- 1 cup wine
- 2 tablespoons butter
- 1 tablespoon paprika
- 2 tablespoons dijon mustard
- 1/2 teaspoon cayenne
- 2 cups milk
- - salt and pepper to taste
How To Make parisienne onion and mustard green soup

Step 1Place all the ingredients in a tall pot, save the milk. Bring to a boil, then simmer.

Step 2Simmer for a couple hours or until the soup reduces to half the original amount. Stir occasionally.

Step 3Then stir in milk. Cook for an additional half an hour on low.
