This authentic soup gets right to the heart of things. It is a simple French countryside recipe that is herb-y, savory yet light.
You can tell I am French and Italian by that I made this and served it with Bruschetta dalla Campagna. (see recipe)
Ingredients For parisienne onion and mustard green soup
purple or red onions, sliced
white onions, sliced
chicken or turkey broth
herbes de provence (optional)
salt and pepper to taste
How To Make parisienne onion and mustard green soup
Place all the ingredients in a tall pot, save the milk. Bring to a boil, then simmer.
Simmer for a couple hours or until the soup reduces to half the original amount. Stir occasionally.
Then stir in milk. Cook for an additional half an hour on low.
Add salt and pepper to taste.
