my very favorite gazpacho
I love Gazpacho, and this is my favorite way of preparing it. It makes a very refreshing - and surprisingly filling - summertime dinner!

Ingredients
- 2 cloves garlic, peeled, minced and smashed
- 1 tablespoon white sugar
- 1 and 1/2 teaspoons salt
- 1 can tomato juice (46 oz.)
- 1/4 cup extra virgin olive oil, or vegetable oil
- 2 tablespoons lemon juice
- 1 teaspoon worcestershire sauce
- 3 - tomatoes, finely chopped
- 1 - cucumber, peeled and diced
- 1 - green pepper, finely diced
- 1/4 cup thinly sliced green onion
- 1/2 cup celery, very thinly sliced
How To Make my very favorite gazpacho

Step 1Combine garlic, sugar, salt, tomato juice, oil, lemon juice and Worcestershire sauce. Place in blender and whirl for a few seconds to combine well.

Step 2Stir in vegetables. Cover and chill for several hours. Will keep 3 to 4 days in the refrigerator. *I sometimes set out small bowls of chopped avocado, additional cucumbers and tomatoes, and sour cream to dollop on top, if desired.
