I love Gazpacho, and this is my favorite way of preparing it.

It makes a very refreshing - and surprisingly filling - summertime dinner!

How to Make My Very Favorite Gazpacho

Step-by-Step

  1. Combine garlic, sugar, salt, tomato juice, oil, lemon juice and Worcestershire sauce. Place in blender and whirl for a few seconds to combine well.
  2. Stir in vegetables. Cover and chill for several hours. Will keep 3 to 4 days in the refrigerator.

*I sometimes set out small bowls of chopped avocado, additional cucumbers and tomatoes, and sour cream to dollop on top, if desired.
