my very favorite gazpacho

I love Gazpacho, and this is my favorite way of preparing it. It makes a very refreshing - and surprisingly filling - summertime dinner!

Ingredients

  • 2 cloves garlic, peeled, minced and smashed
  • 1 tablespoon white sugar
  • 1 and 1/2 teaspoons salt
  • 1 can tomato juice (46 oz.)
  • 1/4 cup extra virgin olive oil, or vegetable oil
  • 2 tablespoons lemon juice
  • 1 teaspoon worcestershire sauce
  • 3 - tomatoes, finely chopped
  • 1 - cucumber, peeled and diced
  • 1 - green pepper, finely diced
  • 1/4 cup thinly sliced green onion
  • 1/2 cup celery, very thinly sliced

How To Make my very favorite gazpacho

  • Step 1
    Combine garlic, sugar, salt, tomato juice, oil, lemon juice and Worcestershire sauce. Place in blender and whirl for a few seconds to combine well.
  • Step 2
    Stir in vegetables. Cover and chill for several hours. Will keep 3 to 4 days in the refrigerator. *I sometimes set out small bowls of chopped avocado, additional cucumbers and tomatoes, and sour cream to dollop on top, if desired.
