Ingredients
- 1 tablespoon extra-virgin olive oil
- 1/2 cup onion,chopped
- 1 - carrot,diced
- 1 - garlic clove, minced
- 4 cups fat-free , unsalted chicken broth
- 2 - large tomatoes
- 1/2 cup chopped fresh spinach
- 1 can chickpeas, drained and rinsed
- 1/2 cup uncooked small-shell pasta
- 1 - small zucchini , diced
- 2 tablespoons chopped fresh basil
How To Make minestrone soup

Step 1In a large saucepan, heat the olive oil over medium heat.

Step 2Add the onion, celery and carrot and saute until softened, about 5 minutes.

Step 3Add garlic and continue cooking for another minute.

Step 4Stir in broth,tomatoes, spinach,chickpeas,and pasta.

Step 5Bring to a boil over high heat.

Step 6Reduce heat and simmer for 10 minutes.

Step 7Add zucchini.

Step 8Cover and cook for 5 minutes more.

Step 9Remove from heat and stir in basil.

Step 10Ladle into individual bowls and serve immediately.
