extra-virgin olive oil
1/2 c
garlic clove, minced
4 c
fat-free , unsalted chicken broth
large tomatoes
1/2 c
chopped fresh spinach
1 can(s)
chickpeas, drained and rinsed
1/2 c
uncooked small-shell pasta
small zucchini , diced
2 Tbsp
chopped fresh basil

How to Make Minestrone Soup


  • 1In a large saucepan, heat the olive oil over medium heat.
  • 2Add the onion, celery and carrot and saute until softened, about 5 minutes.
  • 3Add garlic and continue cooking for another minute.
  • 4Stir in broth,tomatoes, spinach,chickpeas,and pasta.
  • 5Bring to a boil over high heat.
  • 6Reduce heat and simmer for 10 minutes.
  • 7Add zucchini.
  • 8Cover and cook for 5 minutes more.
  • 9Remove from heat and stir in basil.
  • 10Ladle into individual bowls and serve immediately.
