Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup onion,chopped
  • 1 - carrot,diced
  • 1 - garlic clove, minced
  • 4 cups fat-free , unsalted chicken broth
  • 2 - large tomatoes
  • 1/2 cup chopped fresh spinach
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup uncooked small-shell pasta
  • 1 - small zucchini , diced
  • 2 tablespoons chopped fresh basil

How To Make minestrone soup

  • Step 1
    In a large saucepan, heat the olive oil over medium heat.
  • Step 2
    Add the onion, celery and carrot and saute until softened, about 5 minutes.
  • Step 3
    Add garlic and continue cooking for another minute.
  • Step 4
    Stir in broth,tomatoes, spinach,chickpeas,and pasta.
  • Step 5
    Bring to a boil over high heat.
  • Step 6
    Reduce heat and simmer for 10 minutes.
  • Step 7
    Add zucchini.
  • Step 8
    Cover and cook for 5 minutes more.
  • Step 9
    Remove from heat and stir in basil.
  • Step 10
    Ladle into individual bowls and serve immediately.
