This is great tasting healthy meal for a meatless Monday dinner

Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions,chopped
  • 2 cups carrots chopped
  • 2 celery stalks, dice
  • 3 garlic cloves,minced
  • 12 ounces green beans,cut in 1” pieces
  • 8 cups kale
  • 12 ounces sweet potato,cut in 1/2” pieces
  • 12 ounces russet potatoes, peeled and cut in 1/2” pieces
  • 6 cups unsalted vegetable or chicken broth
  • 1 can diced tomatoes 28 oz.

How To Make marvelous minestrone soup

  • Step 1
    Heat the oil in a large (8-quart) pot over medium high. Add the onions and cook, stirring,until slightly softened, 4-5 minutes. Add the carrot, celery & garlic and cook stirring occasionally, until slightly softened approximately 4minutes.
  • Step 2
    Add the green beans, kale (or Savoy cabbage) and potatoes, tossing often until the kale is wilted& brightly colored,about 5 minutes.
  • Step 3
    Pour in broth and the tomatoes, cover and simmer 1 hour.
  • Step 4
    Makes 8 servings.
  • Step 5
    You can add 1cup orzo or another small pasta. After it has simmered you can add 2 or 3 cans do cannelini or red kidney beans
