My sweet Cousin Madeline from Lexington, N. C. gave me this recipe, and it's delicious.

Ingredients

  • 6 - potatoes, peeled and cubed
  • 2 - onions, chopped
  • 1 or 2 - carrot, peeled and sliced
  • 1 - celery stalk
  • 4 - chicken bouillon cubes
  • 1 tablespoon parsley flakes
  • 5 cups water
  • 1 tablespoon salt (use less if you want to)
  • - pepper to taste
  • 1/2 cup butter
  • 1 large can of evaporated milk

How To Make madeline's potato soup

  • Step 1
    Cook vegetables in water until tender. Mash coarsely.
  • Step 2
    Add rest of ingredients. Heat slowly.
  • Step 3
    Do not boil after adding the milk.
