    bacon, halved
  • 1 large
    potato, mashed
  • 1 large
    carrots, cubed
  • 3 sprig(s)
  • 3 sprig(s)
  • 2 Tbsp
  • 2 large
    onions, prechopped
  • 2 Tbsp
    garlic, prechopped
  • 1
    knorr cubes or any kind of seasoning available in the area
  • 1 1/2 c
    water/chicken stock
  • 1 c
    evaporated milk
  • ·
    freshly ground black pepper
  • ·
    salt to taste

How to Make Loaded Carrot & Potato Soup


  1. Boil patato until tender,remove the skin, cut in half, cool slightly, mashed. Set aside.
  2. Heat oil in a saucepan over medium-high heat. Add onion & garlic, sauté 3 minutes.Add carrots.Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups water. Put in the knorr chicken cubes. Bring to a boil; stir often. Cook 2 minutes,add salt and pepper.
  3. Remove from heat. Add in the mashed potato. Stir. Serve. Top with cheese,scallions,chopped parsley, & bacon.
