1Boil patato until tender,remove the skin, cut in half, cool slightly, mashed. Set aside.
2Heat oil in a saucepan over medium-high heat. Add onion & garlic, sauté 3 minutes.Add carrots.Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups water. Put in the knorr chicken cubes. Bring to a boil; stir often. Cook 2 minutes,add salt and pepper.
3Remove from heat. Add in the mashed potato. Stir. Serve. Top with cheese,scallions,chopped parsley, & bacon.
