This is very good for breakfast.Because potato has a lot of health benefits. It fight cancer, control your diabetes and get stronger bones by eating these nutritious spuds.

Ingredients

  • 2 slices bacon, halved
  • 1 large potato, mashed
  • 1 large carrots, cubed
  • 3 sprigs parsley,chopped
  • 3 sprigs scallions
  • 2 tablespoons flour
  • 2 large onions, prechopped
  • 2 tablespoons garlic, prechopped
  • 1 - knorr cubes or any kind of seasoning available in the area
  • 1 1/2 cups water/chicken stock
  • 1 cup evaporated milk
  • - freshly ground black pepper
  • - salt to taste

How To Make loaded carrot & potato soup

  • Step 1
    Boil patato until tender,remove the skin, cut in half, cool slightly, mashed. Set aside.
  • Step 2
    Heat oil in a saucepan over medium-high heat. Add onion & garlic, sauté 3 minutes.Add carrots.Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups water. Put in the knorr chicken cubes. Bring to a boil; stir often. Cook 2 minutes,add salt and pepper.
  • Step 3
    Remove from heat. Add in the mashed potato. Stir. Serve. Top with cheese,scallions,chopped parsley, & bacon. Enjoy cooking<3
