I REC'D THIS RECIPE FROM A CO-WORKER BEFORE I RETIRED. IF YOU LIKE KALE, YOU WILL ENJOY THIS SOUP.

Ingredients

  • 1 small bunch of kale
  • 2 teaspoons olive oil
  • 1 large onion, sliced into rings
  • 4 - garlic cloves--finely chopped
  • 1/4 teaspoon red pepper flakes
  • 1 can cannellini beans--rinsed & drained
  • 3 cups chicken broth--fat free
  • 2 cups water
  • 1/4 teaspoon oregano--dried
  • - salt & pepper to taste
  • 2 tablespoons parmesan cheese

How To Make kale & white bean soup

  • Step 1
    WASH KALE WELL, REMOVE LEAVES FROM STEMS & DISCARD STEMS. TEAR LEAVES INTO PIECES. SET ASIDE
  • Step 2
    HEAT OLIVE OIL IN HEAVY PAN OVER MEDIUM HEAT & SAUTE ONION RINGS STIRRING OCCASIONALLY UNTIL IT BEGINS TO CARMELIZE (15 MINS OR SO)
  • Step 3
    ADD GARLIC & PEPPER FLAKES & SAUTE MIXTURE ANOTHER MINUTE.
  • Step 4
    ADD BEANS, BROTH, WATER & OREGANO, BRING TO SIMMER
  • Step 5
    ADD KALE & SIMMER UNCOVERED, STIRRING OFTEN UNTIL DONE. SEASON WITH SALT & PEPPER. I LET THE SOUP SIMMER FOR ALMOST AN HOUR ON LOW HEAT BEFORE SERVING.
  • Step 6
    SPRINKLE PARMESAN ON TOP OF SOUP BEFORE SERVING IF SO DESIRED.
