Ingredients
- 1 small bunch of kale
- 2 teaspoons olive oil
- 1 large onion, sliced into rings
- 4 - garlic cloves--finely chopped
- 1/4 teaspoon red pepper flakes
- 1 can cannellini beans--rinsed & drained
- 3 cups chicken broth--fat free
- 2 cups water
- 1/4 teaspoon oregano--dried
- - salt & pepper to taste
- 2 tablespoons parmesan cheese

Step 1WASH KALE WELL, REMOVE LEAVES FROM STEMS & DISCARD STEMS. TEAR LEAVES INTO PIECES. SET ASIDE

Step 2HEAT OLIVE OIL IN HEAVY PAN OVER MEDIUM HEAT & SAUTE ONION RINGS STIRRING OCCASIONALLY UNTIL IT BEGINS TO CARMELIZE (15 MINS OR SO)

Step 3ADD GARLIC & PEPPER FLAKES & SAUTE MIXTURE ANOTHER MINUTE.

Step 4ADD BEANS, BROTH, WATER & OREGANO, BRING TO SIMMER

Step 5ADD KALE & SIMMER UNCOVERED, STIRRING OFTEN UNTIL DONE. SEASON WITH SALT & PEPPER. I LET THE SOUP SIMMER FOR ALMOST AN HOUR ON LOW HEAT BEFORE SERVING.

Step 6SPRINKLE PARMESAN ON TOP OF SOUP BEFORE SERVING IF SO DESIRED.
