Ingredients

1 smallbunch of kale

2 tspolive oil

1 largeonion, sliced into rings

4garlic cloves--finely chopped

1/4 tspred pepper flakes

1 can(s)cannellini beans--rinsed & drained

3 cchicken broth--fat free
-
2 cwater
-
1/4 tsporegano--dried

·salt & pepper to taste

2 Tbspparmesan cheese
How to Make KALE & WHITE BEAN SOUP
- WASH KALE WELL, REMOVE LEAVES FROM STEMS & DISCARD STEMS. TEAR LEAVES INTO PIECES. SET ASIDE
- HEAT OLIVE OIL IN HEAVY PAN OVER MEDIUM HEAT & SAUTE ONION RINGS STIRRING OCCASIONALLY UNTIL IT BEGINS TO CARMELIZE (15 MINS OR SO)
- ADD GARLIC & PEPPER FLAKES & SAUTE MIXTURE ANOTHER MINUTE.
- ADD BEANS, BROTH, WATER & OREGANO, BRING TO SIMMER
- ADD KALE & SIMMER UNCOVERED, STIRRING OFTEN UNTIL DONE. SEASON WITH SALT & PEPPER.
I LET THE SOUP SIMMER FOR ALMOST AN HOUR ON LOW HEAT BEFORE SERVING. - SPRINKLE PARMESAN ON TOP OF SOUP BEFORE SERVING IF SO DESIRED.
