Ingredients
- 6 medium potatoes, diced
- 1/2 pound bacon (cut up)
- 1 small onion, chopped
- 4 tablespoons butter
- 1 can carrot, cubed
- 2 cans evaporated milk
- - salt and freshly ground pepper to taste
- 1 clove garlic minced
- 1/2 teaspoon rosemary, dried
- 1/2 teaspoon thyme, dried
- 1/2 cup heavy cream
- 8 cups water
- ADD MORE WATER IF NEEDED

Step 1In dutch oven, combine all ingredients except milk and cream.

Step 2Cook potatoes and vegetables, bacon, and spices in water...30 minutes After potatoes are done, do not drain water and turn down to medium heat and add butter just mash 3 to 4 times...

Step 3Pour in milk and cream, salt and pepper to taste...stir and simmer at medium low heat for 20 minutes...serve hot....Enjoy
