This soup is new to our family but the first time we had it, we knew we were going to have it again. Good winter soup.

Ingredients For irish cabbage soup

  • 2 md
    potatoes peeled and diced
  • 1 md
    onion chopped
  • 2
    carrots, chopped
  • 1 md
    cabbage, shredded
  • 3 c
    water
  • 1/2 tsp
    thyme, dried
  • 1
    bay leaf
  • 1 1/2 tsp
    salt
  • 1 1/2 tsp
    pepper
  • 1
    half and half

How To Make irish cabbage soup

    Add potatoes, onion, carrots and cabbage to boiling water. (parboil the cabbage separately for about 10 minutes if you prefer a milder cabbage flavor.) Add thyme,bay leaf, salt and pepper.

    Bring to a boil and turn down to simmer for about 45 minutes or until vegetables are tender but not mushy.

    Add half and half: heat but do not boil. Serve hot with crusty bread or rolls. Enjoy
