This soup is new to our family but the first time we had it, we knew we were going to have it again. Good winter soup.

potatoes peeled and diced
1 medium
onion chopped

carrots, chopped
1 medium
cabbage, shredded
3 c
water
1/2 tsp
thyme, dried
1
bay leaf
1 1/2 tsp
salt
1 1/2 tsp
pepper
1
half and half

How to Make Irish Cabbage Soup

Step-by-Step

  • 1Add potatoes, onion, carrots and cabbage to boiling water. (parboil the cabbage separately for about 10 minutes if you prefer a milder cabbage flavor.) Add thyme,bay leaf, salt and pepper.
  • 2Bring to a boil and turn down to simmer for about 45 minutes or until vegetables are tender but not mushy.
  • 3Add half and half: heat but do not boil. Serve hot with crusty bread or rolls. Enjoy
