Ingredients
- 2 medium potatoes peeled and diced
- 1 medium onion chopped
- 2 - carrots, chopped
- 1 medium cabbage, shredded
- 3 cups water
- 1/2 teaspoon thyme, dried
- 1 - bay leaf
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons pepper
- 1 - half and half
How To Make irish cabbage soup

Step 1Add potatoes, onion, carrots and cabbage to boiling water. (parboil the cabbage separately for about 10 minutes if you prefer a milder cabbage flavor.) Add thyme,bay leaf, salt and pepper.

Step 2Bring to a boil and turn down to simmer for about 45 minutes or until vegetables are tender but not mushy.

Step 3Add half and half: heat but do not boil. Serve hot with crusty bread or rolls. Enjoy
