Easy to make, this broccoli, ham, and cheese soup is comforting on a cool day. The Instant Pot is an easy way to quickly prepare homemade soup. Creamy, we loved the bits of broccoli and the savory chunks of ham. It's a great recipe to use any leftover ham. Sprinkle with a little extra cheese for a wonderful meal.

Ingredients
- 2 cups diced, cooked ham
- 1/4 cup butter (1/2 stick)
- 3 tablespoons dehydrated onion flakes
- 2 teaspoons dehydrated garlic flakes or minced garlic or garlic powder
- 4 cups fresh broccoli flowerets
- 2 cups chicken broth
- 2 cups milk
- 1/4 cup corn starch
- 1/2 pound Velveeta cheese cut into cubes
- - salt and pepper, to taste
How To Make instant pot broccoli, ham, and cheese soup

Step 1Select the SAUTE button on your Instant Pot.

Step 2Melt butter, add ham, garlic and onion. Saute until ham is starting to brown.

Step 3Press CANCEL on Instant Pot.

Step 4Add broccoli and broth to Instant Pot.

Step 5Cover and lock the lid. Make sure the steam releasing handle is pointing to sealing. HIGH pressure for 3 minutes.

Step 6When cook time is finished, use quick release. When pressure is released, remove lid.

Step 7Strain broccoli out and finely chop. Then return broccoli to the pot.

Step 8Select the SAUTE button and bring broth back to a simmer.

Step 9Mix corn starch and milk together until smooth. Add milk and Velveeta to the pot. Continue to stir until smooth and thickened.

Step 10Salt and pepper to taste if needed.

Step 11Press CANCEL on the Instant Pot. Ladle soup into bowls and serve!
