hearty vegetable barley soup

I have been making this soup since my children were small. They love it so much they are now making it for their own families. It is wonderful supper on a chilly fall or winter night. This soup is so hearty that I often serve with just hot biscuit.

Ingredients

  • 1 pound lean ground beef ( can also use ground turkey)
  • 1 cup chopped onion
  • 1 clove garlic minced
  • 7 cups water
  • 1 can diced tomatoes (i use the ones with basil onion and garlic)
  • 1/2 cup uncooked barley
  • 1/2 cup sliced celery
  • 1 cup sliced carrots
  • 3-4 - beef bouillon cubes
  • 1 teaspoon crushed basil
  • 1-2 - bay leaf
  • 1 - 9 0z pkg. mixed frozen vegtables

How To Make hearty vegetable barley soup

  • Step 1
    Brown ground beef drain, add onion and garlic cook till onion is tender. Stir in remaining ingredients, except frozen mixed veggies. Cover brings to a boil. Reduce heat; simmer 50-60 minutes stirring occasionally. Add frozen veggies cook until tender. Additional water may be needed.
  • Step 2
    This can also be done in a crock pot. Just add frozen veggies 45-60 minutes before serving.
