I have been making this soup since my children were small. They love it so much they are now making it for their own families. It is wonderful supper on a chilly fall or winter night. This soup is so hearty that I often serve with just hot biscuit.

  • 1 lb
    lean ground beef ( can also use ground turkey)
  • 1 c
    chopped onion
  • 1 clove
    garlic minced
  • 7 c
  • 1 can(s)
    diced tomatoes (i use the ones with basil onion and garlic)
  • 1/2 c
    uncooked barley
  • 1/2 c
    sliced celery
  • 1 c
    sliced carrots
  • 3-4
    beef bouillon cubes
  • 1 tsp
    crushed basil
  • 1-2
    bay leaf
  • 1
    9 0z pkg. mixed frozen vegtables

How to Make Hearty Vegetable Barley Soup


  1. Brown ground beef drain, add onion and garlic cook till onion is tender. Stir in remaining ingredients, except frozen mixed veggies. Cover brings to a boil. Reduce heat; simmer 50-60 minutes stirring occasionally. Add frozen veggies cook until tender. Additional water may be needed.
  2. This can also be done in a crock pot. Just add frozen veggies 45-60 minutes before serving.
