hearty vegetable barley soup

I have been making this soup since my children were small. They love it so much they are now making it for their own families. It is wonderful supper on a chilly fall or winter night. This soup is so hearty that I often serve with just hot biscuit.

Ingredients
- 1 pound lean ground beef ( can also use ground turkey)
- 1 cup chopped onion
- 1 clove garlic minced
- 7 cups water
- 1 can diced tomatoes (i use the ones with basil onion and garlic)
- 1/2 cup uncooked barley
- 1/2 cup sliced celery
- 1 cup sliced carrots
- 3-4 - beef bouillon cubes
- 1 teaspoon crushed basil
- 1-2 - bay leaf
- 1 - 9 0z pkg. mixed frozen vegtables
How To Make hearty vegetable barley soup

Step 1Brown ground beef drain, add onion and garlic cook till onion is tender. Stir in remaining ingredients, except frozen mixed veggies. Cover brings to a boil. Reduce heat; simmer 50-60 minutes stirring occasionally. Add frozen veggies cook until tender. Additional water may be needed.

Step 2This can also be done in a crock pot. Just add frozen veggies 45-60 minutes before serving.
